Stability is the key 

While the temperature and humidity are important (more on that in a moment) what’s really critical is stability. Temperature fluctuations of more than 5℉ are considered unacceptable. This takes a sophisticated climate control system.

Ideal temperature

This is a good time to point out the ideal storage temperature is different from the ideal serving temperature. Fifty-five degrees is generally considered ideal for storing red AND white wine even though the serving temperature is much different. When the wine is stored at a warmer temperature it can age more rapidly which tends to bring out undesirable flavors. A low temperature slows the aging process. This isn’t desirable either but is not as damaging as being too warm.

Humidity

Dry air is bad for wine storage. It causes the cork to dry out and shrink. This allows more air to come in contact with the wine. This is also why wine should ALWAYS be stored on its side. This keeps the bottom of the cork from drying out. To preserve the exposed top of the cork the humidity in your wine room should be between 60 and 80 percent.
